Cream of Chicken and Vegetable Soup

This silky-rich chicken soup is a terrific main dish on a cold Winter's night.

INGREDIENTS

1/4 cup (1/2 stick) butter or margarine
1/4 cup all-purpose flour
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 package (16 oz.) frozen mixed vegetables
2 (about 8 oz. total) boneless, skinless chicken breast halves
1 can (14.5 fl. oz.) chicken broth
1/4 teaspoon onion salt

DIRECTIONS

MELT butter in medium saucepan over medium heat. Stir in flour. Gradually stir in evaporated milk. Cook, stirring constantly, until mixture comes to a boil. Add vegetables, chicken, broth and onion salt. Heat through.

NOTE: For a lower-fat version of this recipe, substitute NESTLÉ CARNATION Evaporated Lowfat Milk and 1 can (14.5 fl. oz.) light or fat-free chicken broth. Proceed as above.

This recipe helped with unexpected dinner guests one night, my neices and nephews are really picky eaters... so I was crossing my fingers that they would like this... I added 1/2 cup of cooked/steamed white rice to the recipe to fill it up. It was gone before I could blink. I made another potfull the next weekend and it went just as fast.

My husband and I love this soup! It was very easy to make, and could easily be adjusted with different vegetables, seasonings on the chicken, or even ground meat. It goes wonderfully with garlic bread and a salad. I will be making this again!

I did the low fat version, but also added diced cooked potatoes and onions to the frozen veggies. Very happy with the results. Had some crusty wheat bread on the side for a quick dinner.

This is simple enough for any member of our family to cook, and VERY good. I increased the evaporated milk to two cans, and substituted dehydrated onion flaked for the onion powder. Added poultry seasoning also. Will have fun playing with other seasonings and different veggies in the future. Darling Son says this is an "After Snow Shoveling" dish.

I had been searching for a creamy veggie soup for a long time when I ran across this one. The recipe is VERY easy & consistency is great. The addition of chicken makes it a heartier soup too. However, it lacked some of the rich flavor I had enjoyed in a creamy veggie soup at a dinner theater. The next time I made it I added generous shakes of salt & pepper & used a 1/2 can of cream of chicken soup for more chicken flavor.
