Apple Brown Rice Stuffing

Healthy brown rice instead of boring white bread stuffing. Crisp apples complement the nutty flavor of the brown rice and bran.

INGREDIENTS

1 1/2 cups uncooked brown rice
3 1/2 cups Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice divided
2 teaspoons margarine
1 apple diced
1/2 cup chopped onion
1/2 cup sliced celery
1/3 cup raisins
1/2 teaspoon poultry seasoning
1/4 teaspoon dried thyme crushed
1/4 teaspoon ground black pepper
1/3 cup bran
1/3 cup slivered almonds

DIRECTIONS

PREPARE rice according to package directions, using 3 1/4 cups Juicy Juice for the liquid.

MELT margarine in large skillet over medium-high heat. Add apple, onion, celery, raisins, poultry seasoning, thyme and pepper; cook, stirring occasionally, until vegetables are crisp-tender. Stir in rice, bran, nuts and remaining 1/4 cup Juicy Juice.

USE as stuffing for poultry or pork roast, or place in greased 13 x 9-inch baking pan and bake in preheated 350° F oven for 35 minutes.

Used as pork chop stuffing with 1/2 apple juice and 1/2 water. Everyone liked it. Used the leftover stuffing for lunch but added more raisins, almonds, bran and apple juice.

We really like rice so when I made this but I didn't use it as stuffing; it made a gread side dish. This would go well with most meats but it is especially good with chicken.

I made this recipe using homemade apple juice, so I don't know if it made a difference in how the rice cooked. I followed the directions, but I had to cook the rice much longer than the recommended 40 minutes. I thought the recipe was pretty good, but my husband's not wild about brown rice. He thought it was ok. I baked it in the oven covered at 350 for about 30 minutes.

This is definitely a good recipe that not only tastes great, but it is quick and easy to prepare. It went great w/ pork chops. Instead of cooking the ingredients in a skillet, I saved myself some time by putting these ingredients in a microwave dish and microwaved it for about 3 min. Then, I stirred it and added it to the rice I made w/ the apple juice. The ingredients may have been a little crispier than if you make it the way it instructs one to make it in the recipe, but it still tasted good and turned out great. I definitely recommend this to anyone that is in a hurry after getting home from work that wants a good side dish in addition to a salad and grilled meat.

I made this for my family at Thanksgiving, instead of the tradional kind. They absolutely loved it. The raisins are full of apple juice flavor, and the apples were just the right accompaniment. A great dish for fall. I'll definitely be making this again.

Excellant as a stuffing or side dish. This rice is sure to please everyone is your family. My whole family even my younger children cleaned their plates. The sweetness of the raisins and the crunchy of the almonds make this rice a treat that I plan on serving often.
